Chicken lime kabobs are very healthy and they taste great! first to prepare you must have 3 limes 3 tbs lime concentrate (frozen works best) 4 tbs orange marmalade ( I chose the one with the peels in it) 4 chicken breasts (lean)
Step one: Grate the lime rinds off of two limes and place in medium sized bowl.
Step two: cut both of the grated limes in half and squeeze out the juice and put in the bowl. Then put in the marmalade and juice concentrate.
step 3: Cut the chicken into thin strips and mix it in the bowl. Let stand for ten minutes. While it is sitting turn the broiler on.
Step 4: take chicken out of bowl and place on skewer ( I prefer threading it in and out of the skewer) until it is filled. Then take a cooking brush and brush two coats on one side of chicken and put in broiler for five minutes.
Step 5: Take out of broiler and repeat on other side. Cut the last lime into wedges and srve on plater with wedges surrounding it (each person get their own wedge to drizzle on meal)
Chicken flavored rice is an excelant side to this exotic dish.
For a nice beverage I took pineapple fanta and added lime juice to it.
