Ravioli with Green Sauce

1/2-3/4 LB Good Quality Ravioli (cooked to firm texture in boiling water with little salt)

2 Table Spoons Olive Oil

1 Table Spoon Butter

1 Bunch Fresh Cilantro

1 Hot Chili Pepper

3 or 4 Cloves of Roasted garlic

1/2 Teaspoon Finely Minced Ginger (optional)

1 Small Red Onion Chopped

2 Teaspoons White Wine Vinegar

2 Tablespoons Lemon Juice

1/2 Teaspoon Salt

1/2 Teaspoon Fresh Black Pepper


Add all but first three ingredients in a blender and blend  until it forms smooth paste. Add olive oil to a hot pan and toss cooked ravioli in that. Add butter and toss ravioli a couple of times. Add 4-5 tablespoons of cilantro paste in it and let it cook for about a minute. Re-season to taste and serve with crusty bread. (You can substitute parsley for cilantro)
