Lemon Herb Zucchini



1 lb Green Zucchini

1 lb Yellow Zucchini Squash

1 Pint Cherry Tomatoes cut in half pieces

1 Tablespoon Fresh Lemon Thyme (or Use thyme and 1 teaspoon lemon juice)

1/4 Teaspoon Lemon Zest (Optional)

1 Teaspoon butter

1 Tablespoon Olive Oil

Salt and Black Pepper to taste


Cut both types of zucchini into 1/8th inch circles. Heat a frying pan and put olive oil and butter in it. Put cut zucchini in it and cook for about 2 minutes. add thyme and zest and cook for another minute and a half. Keep flipping or stirring. Add cherry tomatoes and stir for another half minute and remove from heat. Serve as a side or topped with steamed fish.
